Hedgehog Slice

Yes, a bizarre name indeed. The taste however, is divine, so good that in fact I sometimes avoid making it purely because I eat it all, far too quickly. But then again, if that isn’t a good enough reason to try out a recipe, I don’t know what is šŸ˜‰


Of course, some of you may not like pistachios, and I assure you this recipe is just as good without them, so feel free to leave them out. Or, perhaps you would like to add some things in, raisins or almonds perhaps? Have a play šŸ™‚

Be warned, there is raw egg in this recipe, so if the lucky people who are destined to consume this slice have health reasons that prevent them from eating raw egg, please warn them!

Hedge Hog Slice

175 g butter
2/3 cup sugar
4 tbsp cocoa
2 tbsp desiccated coconut
1 egg
Ā½ shelled pistachios
250g packet of plain biscuits
250g dark chocolate
50g butter

Combine butter, sugar and cocoa in a saucepan for about 3 minutes on medium heat. Keep stirring to be sure that the sugar dissolves. Remove from heat. Break up the biscuits into small chunks. Lightly beat the egg. Add the coconut, egg, pistachios and biscuits into the saucepan a mix thoroughly. Press into a lined 28x18cm baking tin and refrigerate for 1 hour or until set.
Melt the butter and chocolate together in a double boiler, and mix until combined. Spread evenly over the slice and refrigerate until set. Slice with a hot knife and store in an airtight container.

Makes about 40 squares
