Chewy Lemon Cookies

Oh yes.
Sugar cookies, delicate but powerful lemon flavour in a chewy, sugar encrusted cookie? Yes indeed. There really isn’t much else to be said about them, apart from that yes, they are as good as the name (and hopefully photo) suggests and they are super easy. So without further ado, here is the recipe!

Chewy Lemon Cookies

1&1/2 cups flour
1/2 tsp baking soda
1/4 tsp baking powder
60g butter, softened
3/4 cup sugar
1 egg
Juice and zest of two lemons
1/4 tsp lemon oil (optional)

extra sugar for rolling
Preheat the oven to 180 degrees celsius and line or grease two baking trays.
Mix the flour, baking soda and baking powder together. Cream the butter and sugar until light and fluffy, then add the egg and juice and zest of lemons, and oil if using. Mix in the dry mixture bit by bit, until a soft dough is formed. You may want to chill the dough for about 20 mins if you think it is too soft to handle. Shape the dough into balls (about tablespoon sized) and roll in the extra sugar. Place on trays and flatten, or flatten them just after they have come out of the oven. Bake for 10 minutes, until slightly golden on the bottom. Cool on trays for 10 mins then transfer to a wite rack to cool completely.

Just a word of advice, don’t expect them to be super golden to show their done-ness; if anything it is better to underbake than overbake them so they stay chewy!
