(Yes, I’m serious) Cheese Brownies


Christmas brings with it a variety of…. endurance tasks and leaves behind many things often in the form of leftovers. Roasts, salads, cheeseboards, snacks…. in fact any event does that really! So, I present to you a way to solve one of these problems (or perhaps more, depending on how creative you get!


These babies are courtesy of Laura Vincent in her delightful book Hungry and Frozen. It really is great and full of innovative cooking ideas, she’s someone I admire! They are super easy and you can eat them in whatever way pleases you most. We had them with salad for lunch.


Here is the recipe, which was adapted slightly from Laura’s.

Cheese Brownies
100g butter
120g random cheese
100g yogurt
2 eggs
Salt and pepper
150g flour
1 tsp baking powder
Random crumbled cheese, like feta

Preheat the oven to 180 degrees Celsius and line a 20cm square baking tin.
Melt together the butter and cheese, then mix in the yogurt (don’t worry if it looks funny!). Mix in the rest of the ingredients except the crumbled cheese, making sure the baking powder is well dispersed too! Then pour the batter into the tin, even out the top and sprinkle on the cheese.
Bake for 30 minutes until golden and a skewer comes out clean when inserted. Cool in the tin until warm enough to eat and then devour!
Makes about 16 brownies.

+You could add some dried tomatoes, olives, herbs etc too! Delicious.
