Another Divine Carrot Cake



It’s hard not to feel good when eating veggies in a cake 🙂 I hope you have all had a good week and for all you in the northern hemisphere, a beautifully warm one!


I like making ‘wreaths’ for cakes, as you may have noticed previously and I think they look gorgeous. Carrot cake always seems like ‘Mother Earth’ embodied in a cake to me.



Another Carrot Cake!
100g sugar
125ml canola oil
50g plain yogurt
2 eggs
180g flour
¾ tsp baking soda
½ tsp cinnamon
½ tsp ginger
¼ tsp nutmeg
Pinch of cardamom
180g finely grated carrot
50g softened butter
85g cream cheese
90g icing sugar
Lemon zest
To decorate:
Nuts, seeds and dried fruit

Preheat the oven to 180 degrees Celsius. Grease a 20cm diameter circle cake tin.
In a large bowl, whisk together the sugar and oil, then the yogurt, followed by the eggs one at a time. Sift together the flour, baking soda, cinnamon, ginger, nutmeg and cardamom in another bowl and mix to combine. Fold the dry ingredients into the egg mixture until just combined. Then fold in the carrots gently. Pour the mixture into the cake tin and bake for about 40 minutes. A skewer will come out clean when inserted when the cake is cooked. Cool in the tin.

When ready to assemble, make the frosting. Beat the butter in a bowl until soft, then smush up the cream cheese with your fingers, dropping the bits into the butter. Mix until combined and the mixture has lightened. Mix in the icing sugar and lemon zest to taste.

Cut the carrot cake in half and place the bottom layer on the plate you want to serve it on. Spread about ¼ of the frosting on top, then place on the top layer. Lovingly slather on the rest of the frosting and smooth the top in whichever fashion you desire. Arrange the toppings around the edges like a cute halo (I sprinkled the seeds and placed on the others but if you are short of time or can’t be bothered, then sprinkle all the toppings!). Serves 8-10.

The cake can be made the day before and assembled a few hours in advance.
